The delicious nature of bitterness and astringency cannot be appreciated unless the person is an adult and as such, 'bitterness' and 'astringency' are adjectives used to refer to mature adults, in particular males. A good man tempered by bitter experience' captures this sense. Alternatively, Japanese uses 'astringent' as an expression to convey the sense of a 'centered' adult.
